These just may be the best Rosemary Lemon Cookies. Ever.
The texture is moist and tender. They'll have you ready to cuddle up with a blanket and a hot cup of tea. So soft, light and lemony and only 5 ingredients and less than 5 minutes to make!!
They required no fancy equipment. Simple grab a bowl and a whisk and you are good to go!
Serve these at your next get-together, movie night, party {or tea party?? do they still happen? 'cause now I really want to host one🤔} or you know... today.

Pre heat your oven.
Whisk together dry ingredients.
Mix in wet ingredients.
Bake.
Eat.

Recipe
Lemon Cookies
Ingredients
- 2 cup almond flour 216g
- ¼ cup coconut sugar
- ¼ teaspoon baking soda
- pinch sea salt
- 1 zest of 1 lemon
- ¼ cup lemon juice about 1½ lemons
- 2 tablespoon rosemary dried, chopped finely optional
Instructions
- Set oven to 325° F
- In a medium bowl whisk almond flour, coconut sugar, baking soda, sea salt & lemon zest together till combined.
- With a spatula stir in lemon juice until dough forms and no dry ingredients remain
- Onto a parchment or silicone mat covered baking sheet, divide dough into 12 balls and then slightly flatten with palm of hand. Shape as desired. Cookies do not spread much.
- Sprinkle each cookie with a little rosemary if using and gently press in.
- Bake cookies for 14 minutes. Remove from oven and allow to cool for at least 10 minutes before removing from baking sheet
- Enjoy with your favorite cup of tea!!
