But really, I'm a little over the traditional green bean casserole. Soggy green beans smothered in a creamy sauce... meh. I don't know. I do love those crispy little onions on top... but that's basically my favorite part.
This casserole is SO easy. It uses fresh green beans that require NO BLANCHING. The end result is a tender green bean that still feels like it was a green bean! That's the goal right?? A green bean that's cooked to perfection, and not baked to death. 👍
Then we top that cheesy goodness with thin crispy potatoes! A fun crisp topping that gives the casserole that WOW factor that you want your guest to have when you pull it out of the oven at your holiday meal!
Cheesy Green Bean Casserole with Crispy Potatoes
Making this casserole could not be easier. Simply toss fresh green beans with your favorite cheese sauce. I recommend the BEST Vegan Cheese Sauce, of course! 😉 I always have a batch prepped, and the early prep makes this casserole extra easy to make.
After tossing the beans in your cheese sauce, dump it into your casserole dish and get ready to potato it.
Using a mandolin or a knife, thinly slice the washed potatoes and toss them with some flavor, a simple blend of smoked paprika, garlic and salt. Layer it on top of the casserole, cover tightly and bake!! A quick broil at the end crisps those potatoes to perfection!
Just YUM. I'd eat this any day of the week. You're holiday guests will LOVE it!! It's so delicious, but the best part is it's made of wholesome ingredients that won't leave you feeling weighed down! Cheesy Green Bean Casserole with Crispy Potatoes
Ingredients
- 1½ lb fresh green beans (24oz)
- 3 cups vegan cheese sauce *see notes for recipe link!
- 1 large white potato very thinly sliced, about 4 mm thick
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ¼ teaspoon sea salt
- non-stick spray
Instructions
- Preheat oven to 400°
- Trim green beans and cut into 1 inch pieces. Add to a casserole dish (I used a 12x9 dish and it fit perfect), pour over cheese sauce and gently mix to combine.
- Take thinly sliced potatoes and toss in a bowl with spices. Layer on top of green beans in one slightly overlapping layer. Give the top of potatoes a quick spray of non-stick oil spray, cover tightly and bake for 40 minutes.
- Remove cover and bake another 20 minutes. Set oven to broil and crisp potatoes for 4-6 minutes, watching carefully to prevent burning.
- Casserole will be VERY hot. Allow to cool for at least 15 minutes before serving.
