These Peanut Butter Cookies will have you reaching for a glass of {vegan} milk! Made lighter with the use of peanut butter powder and sweetened only with maple syrup, enjoy your favorite cookie in a more wholesome form! Add chocolate chunks because, peanut butter and chocolate are a match from the heavens. 🙏
My goal when it comes to desserts, is to recreate some of my favorites in healthier ways and it's not easy! Skipping the butter, shortening, oil... all those ingredients I grew up using to make cookies soft and make your palate go crazy is a big adjustment! BUT IT CAN BE DONE.
It took a few attempts, but these Peanut Butter Cookies are GOOD. They're soft, so peanut buttery and just sweet enough. Plus, I added chocolate chunks because I couldn't resist. Feel free to leave them out... but I couldn't 😂
Accidently gluten free, these cookies use a blend of almond flour and oat flour. Note- I tried this with less almond and more oat flour, however, it needs some balance of fat to turn out delicious. If you try to increase the oat flour, they will taste good, but the texture will be drier.
I love peanut butter powder, I use it a ton to make simple dressings or dips. Peanut Butter powder gives us the peanut buttery-ness that one would expect in a PB cookie, but greatly reduces the fat.
Healthier Peanut Butter Cookies with Chocolate Chunks
These cookies could not be any simpler to make. First, grab your simple ingredients..
- powdered peanut butter
- oat flour
- finely sifted almond flour
- maple syrup
- vanilla extract, sea salt, baking powder
- vegan chocolate chunk (I like to use Trader Joe's or just my favorite chocolate bar broken up!)
Whisk together the dry ingredients. Stir in wet until fully combined and fold in the chocolate.
Use a spoon or cookie scoop to place on parchment lined baking sheet. Press down using hands or make a criss cross pattern using a fork.
Bake, cool & enjoy!! 💜

Peanut Butter Chocolate Chunk Cookies
Ingredients
Dry Ingredients
- ½ cup powdered peanut butter
- ¼ cup oat flour (gluten free) 23g
- ½ cup finely sifted almond flour 48g
- ⅛ teaspoon sea salt
- ½ teaspoon baking powder
Wet Ingredients
- ⅓ cup maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoon vegan chocolate chunks 30g
Instructions
- Preheat oven to 350°. In a large mixing bowl whisk together all dry ingredients.
- Stir wet ingredients into dry until fully combined. Fold in chocolate chunks.
- Roll cookies into 8 balls and place onto lined cookie sheet. Use the back of a fork to flatten cookies and make a criss cross pattern.
- Bake 9-11 minutes, allow to cool on baking sheet for 10 minutes, prior to moving to a wire cooling rack.
