Lightened up cookies for your holidays! These Peanut Butter Chocolate Chunk Cookies are rich and feel indulgent! Made healthier with Peanut Butter Powder, naturally sweetened and gluten free!

Ingredients
  

Dry Ingredients

  • ½ cup powdered peanut butter
  • ¼ cup oat flour (gluten free) 23g
  • ½ cup finely sifted almond flour 48g
  • teaspoon sea salt
  • ½ teaspoon baking powder

Wet Ingredients

  • cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoon vegan chocolate chunks 30g

Instructions
 

  • Preheat oven to 350°. In a large mixing bowl whisk together all dry ingredients.
  • Stir wet ingredients into dry until fully combined. Fold in chocolate chunks.
  • Roll cookies into 8 balls and place onto lined cookie sheet. Use the back of a fork to flatten cookies and make a criss cross pattern.
  • Bake 9-11 minutes, allow to cool on baking sheet for 10 minutes, prior to moving to a wire cooling rack.

Notes

Storage- After fully cooled, store in a sealed container on the counter for up to 7 days.
