Healthy Oatmeal Raisin Cookies

Delicious cookies without the guilt in less than 30 minutes?? I didn't think it was possible, but here we are! These cookies are soft and comforting and really hit the spot while using wholesome ingredients and no refined sugar!

Ingredients
  

  • cup raisins
  • 2 ripe bananas large
  • 2 teaspoon vanilla extract
  • 1 tablespoon ground flax seed
  • 1 cup rolled oats gluten free if needed
  • 1 cup almond flour
  • ½ teaspoon nutmeg
  • 2 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon baking powder

Optional add-ins

  • chocolate chips
  • chopped walnuts

Instructions
 

  • In a small bowl add raisins and cover with water to soak while preparing cookies. Set oven to 350°
  • In a medium bowl, mash banana very well with a fork and mix in vanilla extract
  • Mix remaining dry ingredients in a bowl.
  • Add dry ingredients to banana mixture and mix till fully combined.
  • Drain raisins and add into cookie dough. Add any additional add-ins at this time
  • Using hands or 2 inch cookie scoop, place cookie dough balls onto baking sheet lined with silpat or parchment paper. Press cookies down slightly with hands to make disc shapes as cookies do not spread much.
  • Bake for 13-15 minutes and allow to cool 5 minutes before moving. Makes about 20 cookies.

Notes

*I recommend storing these in a container in the fridge to maintain the best freshness!
