Ingredients
  

  • 1 sweet onion diced small
  • ¾ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon italian seasoning
  • ¾ cup vegan chicken broth
  • 2 tablespoons nutritional yeast
  • 1 can (15oz) white beans like cannellini or navy beans
  • to taste salt & pepper
  • ½ tablespoon apple cider vinegar
  • ¼ teaspoon red pepper flakes, optional
  • ½ tablespoon cornstarch +2 tablespoons water

Instructions
 

  • Add the diced sweet onion to a nonstick pan over medium heat. Cook for 5 minutes, stirring occasionally, until softened and lightly golden. Add a splash of water as needed to prevent sticking.
  • Stir in the garlic powder, smoked paprika, and Italian seasoning. Let cook for about 30 seconds to bloom the flavors.
  • Pour in the vegan chicken broth and add the nutritional yeast. Stir well to combine.
  • Add the drained and rinsed white beans. Stir and let everything simmer for 5–7 minutes so the flavors can meld.
  • In a small bowl, mix the cornstarch with water to create a slurry. Pour it into the pan and stir continuously for 1–2 minutes, until the sauce becomes thick and creamy.
  • Add salt, pepper, apple cider vinegar and red pepper flakes (if using) to taste. Serve warm on toast, over potatoes, rice, or alongside veggies for a simple, cozy meal.
