- 1 sweet onion diced small
- ¾ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 1 teaspoon italian seasoning
- ¾ cup vegan chicken broth
- 2 tablespoons nutritional yeast
- 1 can (15oz) white beans like cannellini or navy beans
- to taste salt & pepper
- ½ tablespoon apple cider vinegar
- ¼ teaspoon red pepper flakes, optional
- ½ tablespoon cornstarch +2 tablespoons water
Add the diced sweet onion to a nonstick pan over medium heat. Cook for 5 minutes, stirring occasionally, until softened and lightly golden. Add a splash of water as needed to prevent sticking.
Stir in the garlic powder, smoked paprika, and Italian seasoning. Let cook for about 30 seconds to bloom the flavors.
Pour in the vegan chicken broth and add the nutritional yeast. Stir well to combine.
Add the drained and rinsed white beans. Stir and let everything simmer for 5–7 minutes so the flavors can meld.
In a small bowl, mix the cornstarch with water to create a slurry. Pour it into the pan and stir continuously for 1–2 minutes, until the sauce becomes thick and creamy.
Add salt, pepper, apple cider vinegar and red pepper flakes (if using) to taste. Serve warm on toast, over potatoes, rice, or alongside veggies for a simple, cozy meal.
