These Flourless Chocolate Banana Cookies come together with just a handful of ingredients and are perfect when you want a naturally sweet, plant-based snack that still feels like a treat.
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a medium bowl, mash the ripe bananas until mostly smooth.
Add the quick oats, cocoa powder, peanut butter powder, and a pinch of salt. Stir until everything is well combined and a thick batter forms.
Using a cookie scoop, scoop the mixture onto the prepared baking sheet, spacing the bites slightly apart. Gently flatten each scoop slightly if you prefer a more cookie-like shape.
Bake for 15–16 minutes, or until the bites are set and lightly firm on the outside.
Allow to cool on the baking sheet for a few minutes, then transfer to a rack to cool completely.
Enjoy right away, or store leftovers in the refrigerator in an airtight container for several days.
