Ingredients
  

  • ½ lb fresh strawberries
  • ½ serving (18g) EarthChimp Strawberry Protein Powder
  • 1 cup unsweetened soy milk or unsweetened almond milk
  • 1 teaspoon vanilla extract
  • pinch salt
  • ¼ cup chia seeds

Instructions
 

  • Add the strawberries, protein powder, almond milk (or soy milk), vanilla extract, and salt to a blender. Blend until completely smooth.
  • Pour the mixture into a bowl or large jar and whisk in the chia seeds until evenly combined.
  • Let the mixture sit for 5–10 minutes, then whisk again to break up any clumps and help the chia seeds distribute evenly.
  • Cover and refrigerate for at least 4 hours, or overnight, until thick and pudding-like.
  • Stir well before serving. Enjoy as is, or top with fresh strawberries, sliced banana, granola, hemp hearts, or a dollop of dairy-free yogurt.

Notes

  • Storage: Store covered in the refrigerator for up to 4 days, making it perfect for meal prep.
  • Protein Powder: Different protein powders absorb liquid differently. If your pudding is too thick after chilling, stir in a splash of milk. If it's too thin, add 1–2 teaspoons of chia seeds and let it sit for another 20–30 minutes.
  • Soy Milk Option: Using unsweetened soy milk increases the protein content even more while making the pudding extra creamy.
