Apple Cider Cookies

Ingredients
  

Dry Ingredients

  • cup all purpose flour 180g
  • 1 cup rolled oats
  • 1 teaspoon cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt

Wet Ingredients

  • ½ cup vegan butter softened
  • cup cane sugar
  • ¼ cup coconut sugar
  • 1 teaspoon vanilla extract
  • cup apple cider
  • 1 cup golden delicious apple (or granny smith) peeled and diced small

Instructions
 

  • Pre heat oven to 375°. In a medium bowl whisk together all dry ingredients.
  • In a large bowl add softened butter and sugars. Cream together using a stand mixer or hand mixer.
  • Add dry ingredients and mix at a low speed, add in vanilla extract and gradually pour in apple cider until just combined and no dry flour remains. Fold in diced apples.
  • Use a 2 inch cookie scoop or spoons to place cookies onto prepared cookie sheets, about 2 inches apart. Gently flatten and shape each cookie using damp hands.
  • Bake for 15-17 minutes until edges start to brown. Remove from oven and allow to cool for 10 minutes before transferring to a wire cooling rack to cool completely.

Notes

Storage- After fully cooled, cookies will keep well stored in a container on the counter for 3 days, or up to 7 in the fridge.
