Instructions

To make the Quick Pickled Veggies

  • Add all ingredients into a bowl or jar and mix to combine. Allow to sit for at least 30 minutes or up to 8 hrs.

Make your burgers!

  • Preheat oven to 325°F. On a baking sheet spread out drained and rinsed black beans. Bake for 8-10 minutes. They should appear to be slightly cracking and dry when finished.
  • In a food processor add all ingredients, except for black beans. Process until everything is combined and onions and cilantro are finely chopped.
  • If baking your burgers, increase oven heat to 350°F
  • Add black beans to food processor and pulse 3-5 times to combine. You don't want this to look super mashed, chunky is good!
  • Divide mixture into 4 or 5 even pieces. Using damp hands shape into patties and place directly onto your hot skillet or baking sheet to cook, press down to form the shape of burger patties.
  • Baking- Place patties onto a parchment or silicone mat covered cookie sheet. Bake for 12 minutes, flip and continue baking for 10 minutes longer.
Skillet- Set non stick skillet to medium-high heat. Cook patties until nicely browned, about 7 minutes and then flip and cook another 5 minutes.

Assemble!

  • On a bun layer on avocado {or mayo}, thinly sliced cucumber, sweet chili sauce, pickled veggies, and fresh cilantro.
