IT'S THE FIRST DAY OF SPRING. I'M SO STINKIN' EXCITED. I'm dreaming of the many sunny days outside, full of gardening and yummy summery foods. I know I'm getting ahead of myself but I just can't wait!!
These Bahn Mi Inspired Burgers are everything. They make me dream of summer nights. I love Bahn Mi's in every form and I also love burgers. Veganizing the meaty portion of a traditional Bahn Mi often proves to be difficult and unsatisfying but this mash up really hits the spot.
Vegan Bahn Mi Black Bean Burgers
I'm so happy to have a Whole Food Plant Based option that's so simple to make. The burger is infused with all those spices and flavors that make that Bahn Mi flavor so unique. The quick pickled veggies add that tangy zing that I'm looking for in a perfect Bahn Mi.
The burger holds up well and doesn't smoosh like many bean burgers out there due to one not-so-secret trick. Lightly baking the beans!! This step will slightly dry out and firm up your beans. Leading to a end result that stays firm and doesn't go in every direction after that first bite.
Options are available to bake the patties or sear them on a non-stick pan or skillet. Both ways are satisfying, though you get a bit more toasted when you cook them on a pan.
Layer on all those recommended toppings and GO TO FLAVOR TOWN. Healthy. Vegan. Whole Foods. You just seriously can't go wrong!

Bahn Mi Black Bean Burgers
Ingredients
Quick Pickled Veggies
- 1 small carrot julienned or shredded
- 3 radishes thinly sliced
- 1-2 serrano peppers thinly sliced, optional
- ⅓ cup vinegar
- 1 teaspoon coconut sugar may sub sugar type of choice
- ¼ teaspoon salt
Bahn Mi Burger
- 1 can black beans drained and rinsed
- ¾ cup chopped sweet onion about ¼ large onion
- 1 teaspoon Chinese five spice seasoning
- ½ teaspoon garlic powder
- 1 tablespoon ground flax seed
- 1 tablespoon hoisin vegan
- ½ tablespoon tamari or soy sauce
- ½ cup rolled oats
- 1 tablespoon chopped cilantro stems {save leaves for serving}
Toppings Options
- cilantro leaves
- sweet chili sauce
- thinly sliced cucumber
- smashed avocado or vegan mayo
- Buns, of course!
Instructions
To make the Quick Pickled Veggies
- Add all ingredients into a bowl or jar and mix to combine. Allow to sit for at least 30 minutes or up to 8 hrs.
Make your burgers!
- Preheat oven to 325°F. On a baking sheet spread out drained and rinsed black beans. Bake for 8-10 minutes. They should appear to be slightly cracking and dry when finished.
- In a food processor add all ingredients, except for black beans. Process until everything is combined and onions and cilantro are finely chopped.
- If baking your burgers, increase oven heat to 350°F
- Add black beans to food processor and pulse 3-5 times to combine. You don't want this to look super mashed, chunky is good!
- Divide mixture into 4 or 5 even pieces. Using damp hands shape into patties and place directly onto your hot skillet or baking sheet to cook, press down to form the shape of burger patties.
- Baking- Place patties onto a parchment or silicone mat covered cookie sheet. Bake for 12 minutes, flip and continue baking for 10 minutes longer.Skillet- Set non stick skillet to medium-high heat. Cook patties until nicely browned, about 7 minutes and then flip and cook another 5 minutes.
Assemble!
- On a bun layer on avocado {or mayo}, thinly sliced cucumber, sweet chili sauce, pickled veggies, and fresh cilantro.

What a unique burger! I was looking for a new veggie burger to try and this did not disappoint. I followed the recipe and the flavors were so good. Will make again.
