This Vegan Beet Poke is inspired by the classic Hawaiian Dish! This easy dish features tender beets marinated in a simple, fishy and delicious marinade. Delicious eaten alone or over rice to make your own poke bowl at home!

Ingredients
  

  • 1 lb boiled & peeled beets *see notes

Marinade

  • tablespoon tamari or sub soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon mayo
  • ½-1 tablespoon sriracha optional
  • 1 sheet nori shredded or cut into tiny pieces
  • 2 teaspoons mirin
  • 2 teaspoons rice vinegar

Optional for serving

  • sliced green onions
  • toasted sesame seeds
  • cooked sushi rice
  • thinly sliced cucumber

Instructions
 

  • Mix all marinade ingredients in a container or bowl until well combined.
  • Dice boiled beets into cubes of around ½ inch in size and add to bowl with marinade, stir until all beets are coated.
  • Chill in the fridge for at least 30 minutes, stirring occasionally to marinate the beets evenly.
  • Enjoy fresh out of the fridge, or put it over rice and top with sesame seeds, sliced green onions and thinly sliced cucumbers!
