This Vegan Beet Poke is inspired by the classic Hawaiian Dish! This easy dish features tender beets marinated in a simple, fishy and delicious marinade. Delicious eaten alone or over rice to make your own poke bowl at home!

Poke is a Hawaiian dish of diced raw fish that is marinated and served as an appetizer or main dish. It's become more popular in the mainland states and often seen served over bowls of rice with sliced veggies and spicy mayo.
This vegan version is my absolute favorite. Tender beets replace the raw fish and they are tossed in the most umami packed marinade that will fool you into thinking you're eating the real thing!

What you'll need
This simple and delicious dish requires only a handful of ingredients to make. Here's the ingredients you'll need to make this vegan beet poke:
Boiled & peeled beets - you can buy these pre-cooked from the grocery store if you prefer, however cooking your own beets is easier than you think and worth the effort. Follow this link to learn how to boil your own beets at home.
Marinade Ingredients -
- tamari or soy sauce
- sesame oil
- vegan mayo
- sriracha (optional)
- sushi nori- I fold it up and use my pair of kitchen shears to get the nori into tiny shreds
- mirin - a rice wine that is slightly sweet and adds an amazing flavor
- rice vinegar
Optional for serving
- sliced green onions
- toasted sesame seeds
- cooked sushi rice
- thinly sliced cucumber
How to make Beet Poke
If you're using fresh beets (which I prefer!), start by following these simple steps to boiling them at home and use the ice bath method for cooling! Then continue with this recipe.
Dice cooked, cooled & peeled beets into about ½ inch pieces.
Add all marinade ingredients in a bowl or container and mix until combined. Add beets and stir well!
Let beets marinate for at least 30 minutes before eating
Enjoy as is or over rice with toppings of your choice!
What type of beets are best?
Any variety of beet will work for this recipe! Pictured on this post you see a variety of red, golden, striped and white beets that I collected from my garden and my local farmers market.
Red beets will work well, however, they may give you a stronger earthy flavor. My preference for this recipe is any other variety besides red, though I will use them in a pinch!
Will store bought precooked beets work for this vegan poke?
Yes! You can save time and effort by buying precooked beets! In this case, I would recommend getting the vacuum packed variety over canned as they seem to be of better quality and fresher in my opinion.
How to Store Leftovers
If you have any leftovers, you can store them in the fridge in a sealed container for up to 3 days! The longer they sit the fishier the flavor!
Fishy Flavor Tip!
The longer you marinate your beets, the fishier they will taste! If you prefer a less fishy flavor I recommend marinating for only the 30 minutes OR using half a sheet of nori in the marinade instead of a full one.

Beet Poke
Ingredients
- 1 lb boiled & peeled beets *see notes
Marinade
- 1½ tablespoon tamari or sub soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon mayo
- ½-1 tablespoon sriracha optional
- 1 sheet nori shredded or cut into tiny pieces
- 2 teaspoons mirin
- 2 teaspoons rice vinegar
Optional for serving
- sliced green onions
- toasted sesame seeds
- cooked sushi rice
- thinly sliced cucumber
Instructions
- Mix all marinade ingredients in a container or bowl until well combined.
- Dice boiled beets into cubes of around ½ inch in size and add to bowl with marinade, stir until all beets are coated.
- Chill in the fridge for at least 30 minutes, stirring occasionally to marinate the beets evenly.
- Enjoy fresh out of the fridge, or put it over rice and top with sesame seeds, sliced green onions and thinly sliced cucumbers!

That is true! The little bit is added into this recipe for a touch of fat, as traditional poke would have fat from the fish. Since we're making a vegan version using beets, the little touch of creaminess & fat goes a long way for the flavor.
You're welcome to leave it out as well, I've done that in the past and it's still tasty 🙂
