Cheesy Green Bean Casserole with Crispy Potatoes

Cheesy Green Bean Casserole is a fun twist on the classic holiday dish! No condensed soup, no crispy onions. Just wholesome ingredients, cheesy filling and crispy taters on top!

Ingredients
  

  • lb fresh green beans (24oz)
  • 3 cups vegan cheese sauce *see notes for recipe link!
  • 1 large white potato very thinly sliced, about 4 mm thick
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • non-stick spray

Instructions
 

  • Preheat oven to 400°
  • Trim green beans and cut into 1 inch pieces. Add to a casserole dish (I used a 12x9 dish and it fit perfect), pour over cheese sauce and gently mix to combine.
  • Take thinly sliced potatoes and toss in a bowl with spices. Layer on top of green beans in one slightly overlapping layer. Give the top of potatoes a quick spray of non-stick oil spray, cover tightly and bake for 40 minutes.
  • Remove cover and bake another 20 minutes. Set oven to broil and crisp potatoes for 4-6 minutes, watching carefully to prevent burning.
  • Casserole will be VERY hot. Allow to cool for at least 15 minutes before serving.

Notes

*Vegan Cheese Sauce- Feel free to use your favorite cheese sauce, but I recommend THE BEST VEGAN CHEESE SAUCE
 
Want to make this ahead?? If you'd like to make this a day ahead, I recommend baking for the 40 minutes covered and then stopping there. Allow to cool fully and then refrigerate until ready. On the Day of, pull out of the fridge and allow to come to room temperature. Bake at 400 degrees F, covered for 15 minutes, uncover and continue baking as noted in recipe.
