Green Blender Pancakes

These fluffy green pancakes are so fun and delicious! They are loaded with wholesome ingredients that will make you feel good eating pancakes any day of the week!

Equipment

  • blender
  • non stick pan or skillet

Ingredients
  

  • 1-2 cups baby spinach
  • 1 cup water
  • 2 very ripe bananas
  • 1 ¾ cups oat flour sub 2 cups rolled oats blended to a flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions
 

  • If you are blending your own oat flour, start this recipe by blending your rolled oats in a high powered blended until they become a fine flour and set to the side for later use.
  • Blend liquid ingredients - To a high powdered blender add spinach, water and banana. Blend until very smooth and no pieces of spinach remain.
  • Blend remaining ingredients- Add remainder of ingredients and blend until smooth batter forms.
  • Cook Pancakes- Set non stick skillet to medium-low heat. Lightly spray pan with non stick spray if needed. Scoop batter onto skillet to form pancakes, about ⅓ cup for each. Cook for 3-4 minutes on one side still lightly browned. Flip and cook 1 minute longer on opposite side.
  • Serve with pure maple syrup, fruit or toppings of your choice!!

Notes

Note- If your batter sits before cooking, it will thicken. Thinning the batter with too much liquid will result in a gummy or flat pancake. I recommend, using a spoon to smooth the pancake batter to your desired thickness and shape after adding to skillet. 
Storage- Store leftover pancakes in a sealed container in the fridge for up to 6 days. Warm in the toaster or microwave when ready to enjoy!
The cooked pancakes can also be frozen in a freezer bag or container for up to 4 months!
