These Vegan Green Pancakes are SO fun and SO delicious. They are mom & kid approved and are a breakfast staple that we enjoy almost every week!
They are full of healthy, wholesome ingredients and I feel good about getting some quality nutrition into my kids first thing in the morning. It's a serious mom win.
I originally made this recipe while in the St. Patty's Day spirit, but these would be great for Halloween too, or honestly any day of the week!! They are an exciting way to get your kids feeling creative and excited at the kitchen table.

Ingredients
All you need is a blender and a few ingredients that you probably already have in your fridge and pantry! Oats, bananas, spinach... not what you would typically expect to see in a pancake!
Here's what you'll need:
- baby spinach
- water
- ripe bananas
- rolled oats or oat flour
- baking powder
- salt
- vanilla extract

If you are blending your own oat flour, start this recipe by blending your rolled oats in a high powered blended until they become a fine flour and set to the side for later use.
Next blend up your liquid ingredients- To a high powdered blender add spinach, water and banana. Blend until very smooth and no pieces of spinach remain.
Blend in the dry ingredients- Add remainder of ingredients and blend until smooth and all ingredients are combined
Cook your pancakes- Set non stick skillet to medium heat. Lightly spray pan with non stick spray if needed. Divide batter into pancakes of about ⅓ cup in size. Cook for 3-4 minutes on one side still lightly browned. Flip and cook 1 minute longer on opposite side.
Serve with pure maple syrup, fruit or toppings of your choice!!
Important Tip:
Make sure to blend your greens, water and banana together BEFORE adding the dry ingredients, otherwise you may end up with bits of spinach visible in your pancake. Blend them up until a bright green, smooth liquid with no chunks appear.

How to I make blender pancakes gluten free?
Simply swap your rolled oats or oat flour for a certified gluten free variety and this green pancake recipe is completely gluten free.
How do I make my own oat flour?
For this recipe grab 2 cups of rolled oats and process in your blended on high until a fine flour forms. This should only take about 15-30 seconds.
Why is my pancake batter so thick?
These pancakes use oats as a base and they will absorb any liquid the longer they sit before cooked. For the fluffiest pancakes, do not thin, simply add the batter to the pan and gently spread to your desired shape using the back of a spatula or a spoon.
*If your batter still seems too thick, you can thin with up to ¼ cup water, but do not add too much water or your pancakes will become gummy.
Can I add toppings to my Green Blender Pancakes??
You sure can!! Top with whatever your heart desires!
My kids love chocolate chips (of course) so I often throw a few in while cooking, or add a few to top them off right after cooking. While the pancakes are still hot, they will melt quickly and you can spread them around for a extra special treat!
My personal favorite topping is fresh blueberries and maple syrup!
Storage
Store leftover pancakes in a sealed container in the fridge for up to 6 days. Warm in the toaster or microwave when ready to enjoy!
The cooked pancakes can also be frozen in a freezer bag or container for up to 4 months!
Top tip
Top tip here is to resist the urge to thin the batter as much as possible! If you thin the batter it will lead to a gummy and/or flat pancake. Take the moment to spread the batter out on the skillet to your desired size and shape, I promise, this will lead to the fluffiest green pancakes you've ever had!

- 1 ¾ cups oat flour sub 2 cups rolled oats blended to a flour
- 1 tablespoon baking powder
- ¼ teaspoon salt
