Healthier Peanut Butter Buckeyes

Peanut Butter Buckeyes made healthy! 4 simple ingredients and just a few minutes of your time to these amazingly decadent little pb balls.

- 1 cup oat flour 87g
- ⅓ cup natural peanut butter
- ¼ cup maple syrup + 1 tbsp
- pinch sea salt (if peanut butter is unsalted)
- ⅔ cup dark or semi sweet chocolate chips* vegan
In a bowl mix together oat flour, peanut butter, maple syrup and salt until fully combined
Roll into balls, about 1 tablespoon in size. Place onto a parchment lined plate or baking sheet and place into the freezer for 30-60 minutes.
Melt chocolate chips in a double boiler** on low heat, stirring frequently till fully melted and smooth
Dip chilled balls into melted chocolate or alternatively drizzle over top.
Chill for a few minutes to allow chocolate to harden and enjoy!!

**Double Boiler Set up- Take a sauce pan and put an inch or two of water in the bottom. Bring water to a low simmer and set a glass or stainless mixing bowl over the water. Add chocolate and proceed.
STORAGE- Store buckeyes in the fridge for up to a week or in the freezer for up to 6 months!
