Are Peanut Butter Buckeyes a common treat for everyone? Growing up I remember a batch of these being in the fridge or freezer to grab and go around most holidays and sometimes just because! Let's make some vegan & HEALTHY peanut butter buckeyes! (and they thought if couldn't be done!)
They are traditionally laden with processed confectioners sugar and butter and then topped off with even more fat from the (not-so-natural) peanut butter.
I'm SO excited to share a much healthier version of these for you to enjoy and for my kids to have fond memories of!
Just the thought of that smooth peanut buttery inside and the crisp chocolate coating has my mouth watering. They are so simple, only involve 4 ingredients and are super low effort.
Healthy Peanut Butter Buckeyes?
Comparing to the traditional version, these Buckeyes are 10000% healthier. They still have fat and sugar. But would they actually be buckeyes without it?
I lightened up the recipe by making a few easy swaps. Natural Peanut butter, instead of the sugar and palm oil laden alternative. Real Maple Syrup instead of Confectioners Sugar and I added in oat flour, for a healthy way to give these balls just the right consistency.
Are these Whole-Food, Plant-Based?
These Buckeyes are 100% vegan and arguably Whole-Food, Plant-Based. The Chocolate chips may be questionable to some, as they are processed and will sometimes contain other ingredients besides just chocolate.
I personally allow some chocolate chips/bars (with minimal ingredients) into my life on occasion for my own mental health and enjoyment. But not as an everyday treat.
The chocolate chips I like to use the most are from Enjoy Life. They have two ingredients - Chocolate & Sugar. Nothing crazy. Just simple ingredients.
There are worst things you could do. Enjoy the chocolate chips. Or don't. Do what makes you happy!

Peanut Butter and Chocolate. Is there really a better combination?
These treats are the perfect dessert to volunteer to your next party, bbq, holiday... whatever you have going on.
They are incredibly easy to make and come together SO quickly. You could even double or triple the batch and keep them in your freezer until your next event or until your next sweet tooth hits. They will last up to 6 months in your freezer, your future self will thank you. (They are delightful eaten right out of the freezer, just in cause you were curious!)

Recipe
Healthier Peanut Butter Buckeyes
Ingredients
- 1 cup oat flour 87g
- ⅓ cup natural peanut butter
- ¼ cup maple syrup + 1 tbsp
- pinch sea salt (if peanut butter is unsalted)
- ⅔ cup dark or semi sweet chocolate chips* vegan
Instructions
- In a bowl mix together oat flour, peanut butter, maple syrup and salt until fully combined
- Roll into balls, about 1 tablespoon in size. Place onto a parchment lined plate or baking sheet and place into the freezer for 30-60 minutes.
- Melt chocolate chips in a double boiler** on low heat, stirring frequently till fully melted and smooth
- Dip chilled balls into melted chocolate or alternatively drizzle over top.
- Chill for a few minutes to allow chocolate to harden and enjoy!!
