These 5 ingredient cookies will make you want to cuddle up with a cup of tea and snuggle your loved ones. Lemony, with a hint of rosemary and just sweet enough to hit that sweet craving!

Ingredients
  

  • 2 cup almond flour 216g
  • ¼ cup coconut sugar
  • ¼ teaspoon baking soda
  • pinch sea salt
  • 1 zest of 1 lemon
  • ¼ cup lemon juice about 1½ lemons
  • 2 tablespoon rosemary dried, chopped finely optional

Instructions
 

  • Set oven to 325° F
  • In a medium bowl whisk almond flour, coconut sugar, baking soda, sea salt & lemon zest together till combined.
  • With a spatula stir in lemon juice until dough forms and no dry ingredients remain
  • Onto a parchment or silicone mat covered baking sheet, divide dough into 12 balls and then slightly flatten with palm of hand. Shape as desired. Cookies do not spread much.
  • Sprinkle each cookie with a little rosemary if using and gently press in.
  • Bake cookies for 14 minutes. Remove from oven and allow to cool for at least 10 minutes before removing from baking sheet
  • Enjoy with your favorite cup of tea!!
