Ninja Creami Chocolate Berry Breakfast Ice Cream

Magically transform your breakfast oatmeal into a filling and delicious breakfast ice cream in your Ninja Creami! This chocolate berry ice cream is a creamy, cool and fun way to start your day!

Ingredients
  

  • ½ cup frozen riced cauliflower
  • ½ cup rolled oats
  • 1 serving chocolate plant-based protein powder
  • ½ cup water
  • ¾ cup soy milk (+2 tablespoons for mix-ins)
  • cup frozen mixed berries

Preparation

  • Blend the base. Add riced cauliflower, oats, protein powder, water, and soy milk to a blender. Blend until silky smooth.
  • Freeze. Pour the mixture into a Ninja Creami pint container. (It will not reach the fill line.) Freeze for at least 24 hours.
  • Defrost berries. Place the frozen berries in the fridge overnight or until soft and juicy.

Ninja Creami

  • First spin. Let your frozen pint sit out for 15 minutes. Spin on the Lite Ice Cream setting. (NOTE: If your frozen ice cream mixture made a bump when freezing, take the time to do your best to smooth that out to protect your Ninja Creami machine.)
  • Add mix-ins. The mixture will appear crumbly at this point. Make a hole in the center all the way to the bottom and add 2 tablespoon of soy milk along with ½–¾ of your defrosted berries and flatten the top before processing again.
  • Second spin. Spin again using the Lite Ice Cream setting.
  • Top & enjoy. Scoop into a bowl, top with remaining berries, and dig in!

Notes

Recipe Notes:
  1. Don't panic if your ice cream is a bit crumbly after the first spin. Make a hole and add a small splash of soy milk and the juicy berries before processing again for creamy results.
  2. This is a one serving recipe, so when you make it, it may not quite reach the freeze max fill line. Use your judgement, whether you need to use the full or bottom half setting. I typically use the full setting if it's over the halfway mark of the pint container.
  3. Get a few extra Ninja Creami Containers so you can prep multiple at a time and have breakfast ready all week!
