Simple, wholesome ingredients are all that you need to enjoy this fun and delicious breakfast! Essentially, you'll be blending up your breakfast oatmeal, no crazy ingredients!

Here's what you'll need for this easy recipe:
- frozen riced cauliflower:
- adds fiber and bulk to your breakfast! Cauliflower is nutrient rich & full of antioxidants.
- rolled oats:
- adds a filling starch to keep you full and satisfied! Oatmeal is heart healthy and a good source of fiber and protein.
- chocolate plant-based protein powder:
- adding protein powder adds flavor, a touch of sweetness and gives us that satisfying protein that will keep us feeling full for longer. I'm using Earth Chimp Plant-Based Protein, but any chocolate variety will work.
- soy milk:
- adds creaminess and improves the texture of your ice cream! Soy milk is great for heart and bone health and adds even more protein!
- frozen mixed berries:
- defrosted frozen berries add a juicy sweetness to our breakfast! Berries are packed with antioxidants and numerous health benefits.

Instructions
Equipment needed: Ninja Creami Ice Cream Maker and a blender.

Step 1: Blend the base. Add riced cauliflower, oats, protein powder, water, and soy milk to a blender. Blend until silky smooth. Freeze. Pour the mixture into a Ninja Creami pint container. Freeze for at least 24 hours.

Step 2: Defrost berries. Place the frozen berries in the fridge overnight or until soft and juicy.

Step 3: First spin. Let your frozen pint sit out for 15 minutes (or run the outside under warm water). Spin on the Lite Ice Cream setting.

Step 4: Add mix-ins. The mixture will appear crumbly at this point. Make a hole in the center all the way to the bottom and add 2 tablespoon of soy milk along with ½–¾ of your defrosted berries and flatten the top before processing again.
Step 5: Second spin. Spin again using the Lite Ice Cream setting.
Step 6: Top & enjoy. Scoop into a bowl, top with remaining berries, and dig in!
