Strawberry Frozen Yogurt Bark

Creamy soy yogurt and strawberry protein powder are topped with fresh strawberries, dark chocolate, crunchy pepitas, and flaky salt before being frozen into the perfect refreshing snack. It's an easy, treat that's great to keep in the freezer whenever a sweet craving hits.

Ingredients
  

  • 1 cup unsweetened soy yogurt
  • 1 serving (35g) EarthChimp Strawberry Protein Powder
  • ¼ cup diced fresh strawberries
  • 1 ounce vegan dark chocolate optional for drizzling
  • 1 tablespoons pepitas
  • flaky sea salt optional for sprinkling

Instructions
 

  • Line an 8-inch baking dish or freezer-safe container with parchment paper.
  • In a medium bowl, whisk together the soy yogurt and strawberry protein powder until smooth and fully combined.
  • Spread the yogurt mixture into an even layer about ¼-inch thick on the prepared parchment.
  • Place the dark chocolate in a small microwave-safe bowl. Microwave in 15-30 second intervals, stirring after each interval, until completely melted and smooth.
  • Sprinkle the diced strawberries evenly over the top. Drizzle the melted chocolate over the yogurt mixture using a spoon.
  • Sprinkle the pepitas evenly over the top, then finish with a light sprinkle of flaky sea salt.
  • Freeze for 4 hours, or until completely firm.
  • Remove from the freezer and breaking into pieces using your hangs. (You may need to let it sit for 5 minutes depending on how long it has been in the freezer.) Enjoy immediately or store in an airtight container in the freezer for up to 2 months.

Notes

  • Unsweetened vanilla soy yogurt also works well for a slightly sweeter bark.
  • Feel free to swap the pepitas for chopped pistachios, almonds, or walnuts.
  • For cleaner pieces, use a sharp knife after letting the bark soften for a couple of minutes.
