Strawberry Frozen Yogurt Bark
Ingredients
- 1 cup unsweetened soy yogurt
- 1 serving (35g) EarthChimp Strawberry Protein Powder
- ¼ cup diced fresh strawberries
- 1 ounce vegan dark chocolate optional for drizzling
- 1 tablespoons pepitas
- flaky sea salt optional for sprinkling
Instructions
- Line an 8-inch baking dish or freezer-safe container with parchment paper.
- In a medium bowl, whisk together the soy yogurt and strawberry protein powder until smooth and fully combined.
- Spread the yogurt mixture into an even layer about ¼-inch thick on the prepared parchment.
- Place the dark chocolate in a small microwave-safe bowl. Microwave in 15-30 second intervals, stirring after each interval, until completely melted and smooth.
- Sprinkle the diced strawberries evenly over the top. Drizzle the melted chocolate over the yogurt mixture using a spoon.
- Sprinkle the pepitas evenly over the top, then finish with a light sprinkle of flaky sea salt.
