Vegan Chocolate Banana Mini Muffins

These moist and tender mini muffins are gluten free, oil free and completely vegan! Super easy to make and even easier to eat. They are a healthy treat that the whole family will love!

Ingredients
  

  • 2 ripe bananas about 1 cup mashed
  • ¼ cup cocoa powder
  • ¾ cup oat flour gluten free if needed
  • cup almond flour finely sifted
  • ½ cup coconut sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt
  • cup soy milk or vegan milk of choice
  • ¼ cup mini chocolate chips, vegan

Instructions
 

  • Preheat oven to 350°F and prepare your mini muffin tin with a light spray of oil or line with mini parchment liners.
  • In a large bowl, mash banana until very little to no chunks remain. Add remaining ingredients (except chocolate chips) to bowl and whisk until completely combined. Stir in chocolate chips.
  • Spoon batter into prepared tin, around 2 tablespoons for each muffin. (This recipe should make about 20-22 muffins) Top each muffin with more chocolate chips if desired.
  • Bake on middle rack for 22-25 minutes. Allow to cool for 10 minutes before removing from tin.

Notes

Storage- Store muffins in a sealed container or bag at room temperature for 3-4 days.
