These oil free & vegan, Loaded Sweet Potato Fries are easy to make and feel indulgent while being secretly healthy!!! Fresh baked fries are piled high with all the toppings, like vegan sour cream, smoky soy curls & all the fresh herbs! This super fun meal can be ready in just around 40 minutes!

Instructions
Preheat oven to 400°F and line two baking sheets with parchment paper.
To a bowl, add soy curls and hot vegan chicken broth.
Cut sweet potatoes into fries, about ½ inch thick. (To cut potatoes into fries: Cut a thin slice off the potato and turn flat so that it won't roll. Continue to slice each potato into ½ inch slices lengthwise. Then take each segment and cut each into lengthwise slices to make the fry shape.)
Place fries onto the lined baking sheet and sprinkle seasonings over top. Toss until spices coat fries evenly.
Drain soy curls well and gently press out extra liquid. Return to the bowl and add the remaining soy curl ingredients.Mix well, then lay out on the second baking sheet in a single layer.
Put both baking sheets in the oven and bake for 30-35 minutes. Stirring and flipping halfway through.
While those are baking, take this time to prep your topping ingredients! Chop the herbs, prep the sour cream if needed and thinly slice the spicy jalapenos.
To assemble, add cooked fries to plates and top with soy curls, vegan sour cream, sliced scallions, jalapenos and any other toppings you choose!! DIG IN.
