Cookies for breakfast? Um, yes. Is that even a real question? These Blueberry Chia Breakfast Cookies are fast, simple and SO FUN.
These cookies are completely whole-food, plant-based. No processed sugars and gluten free. Plus they take less than 30 minutes to make! They are so tasty, full of blueberries and just a touch of sweetness to keep you energized and happy in the morning!
My favorite color is purple and so when the idea of a purple cookie came to me I couldn't contain myself. They impressed my kids too. I literally had to hide them to test how well and how to store them. My first couple batches were demolished within the first day.
Breakfast cookies are a thing right? I'm super bad at staying up to date with what's in. But I know I've definitely seen this, I may be past the trend but is the trend of cookies really ever over? I think not.
Chow down on 5-10 of these cookies for a complete meal loaded with healthy carbs and protein, or just snack on one or two like you would any other cookie.
How to make these Simple Blueberry Chia Breakfast Cookies
These cookie take less than 30 minutes to come together, baking and all.
Start with making your blueberry "milk" by combining frozen blueberries, dates and plant based milk (or water) in a bullet style blender and blending till super smooth.
Combine with your oats & chia, either by hand or blender. Then form your cookies, top with more blueberries for a fun burst of juiciness and bake! Enjoy hot or cold!

Blueberry Chia Breakfast Cookies
Ingredients
- ¾ cup frozen blueberries (¼ cup set aside for topping)
- ½ cup water may sub plant based milk
- 2-4 large medjool dates, pitted* adjust amount to desired sweetness
- 2 tablespoons chia seeds
- 1 cup rolled oats** gluten free if needed
Instructions
- Preheat oven to 325°
- In a bullet style blender add, pitted dates, water and ½ cup of the frozen blueberries, setting the other ¼ cup to the side. Blend well until fully combined
- Add rolled oats and chia seeds to blender. Pulse 3 time till just combined. Stir batter to ensure oats and chia are fully combined with the liquid and then set to the side to thicken for 3-5 minutes.
- Divide batter into 10 cookies, a heaping tablespoon is a great size. {I like to use my ¾ ounce cookie scoop.} Place onto a parchment lined baking sheet
- Press a few of the remaining blueberries onto the top of each cookie.
- Bake cookies for 12 minutes. Allow to cool on the sheet pan for a few minutes then enjoy!
