This Vegan Potato Breakfast Scramble is a unique, delicious and healthy way to start your morning. The portions are large, the veggies are abundant, and the flavors are mind-blowing.
I've been exploring the world of the Potato Reset recently and one question keeps popping up.... "but, what do I eat for breakfast!?" This Potato Scramble was born when I saw a reel of someone eating a tofu scramble and I suddenly thought, "what if I do that... but with POTATOES." Riveting origin story, I know.
This scramble is everything you would think of in a tofu scramble, but made into an even bigger powerhouse of nutrition. It's eggy, filling and packed with veggies and fiber!

Why I love this Potato Scramble and you will too
- The portion is huge. I love to eat a lot of food, but in a healthy way. This is that.
- Veggies for breakfast gives you bonus points for life. But seriously, the veggies are diced, seasoned and blend in so well, it's a great way to get them in in the morning.
- Loads of fiber and other nutrients from the beans & potatoes! I'm a bean lover and research shows that eating beans is so good for you that they can actually add years to your life! BRING ON THOSE EXTRA YEARS PLEASE
- Also, this scramble is just delicious. Rich flavors from the spices and a touch of eggy-ness from Kala Namak.
Substitutions
This Potato Breakfast Scramble is a pretty simple recipe and so there's not a whole lot to change. However, you can customize it to what your preferences are or what you have on hand!
- Vegetables- swap out the veggies for those of your choice. Just make sure you chop them small.
- Beans - swap out the beans for any variety you love.
- Potatoes- I enjoy gold or yellow potatoes in this recipe for their texture. But any variety should really work.
How to store leftovers
This recipe makes a very large serving for one person. But if you happen to have leftovers, they store well in a sealed container in the refrigerator for up to 5 days. Warm them up in the microwave or in a skillet before enjoying.

Vegan Potato Breakfast Scramble
Ingredients
- 1 small onion
- 4 small yellow potatoes
- 1 cup water
- 1 medium zucchini
- 1 bell pepper
- 3 tablespoons nutritional yeast
- ½ teaspoon chili powder
- ⅛ teaspoon cumin (or black cumin)
- ⅛ teaspoon turmeric
- ½ teaspoon garlic powder
- ¾ cup kidney or black beans, drained and rinsed
- ¼-½ teaspoon kala namak (black salt) to taste
Instructions
- Dice the onion and cube the potatoes. Add both to a skillet with the water and bring to a low simmer. Cover and cook for 6-8 minutes, until the potatoes are just beginning to soften.
- While that is cooking, dice up the zucchini and the bell pepper.
- Add the diced vegetables and the remaining ingredients (except the kala namak) to the skillet. Mix well.
- Cook over medium heat for 8-10 minutes, until everything is cooked through. While cooking, stir occasionally and add a small splash of water if needed to prevent sticking.
- Remove from the heat, sprinkle in the kala namak and serve!
