These potatoes are everything. I'm obsessed. Creamy potato shells stuffed with fresh jalapenos, herbs and cheese. A creamy, to-die-for filling and crispy browned top. We've mashed together Jalapeno Poppers and Potato Skins and have arrived at the most amazing appetizer, snack, meal... whatever. Just go for it! 🥔

The EASY... and even EASIER methods
These Popper Potatoes are pretty easy to begin. But if I've got a chance to make a recipe even lazier... you know... for the average busy day as a mom of toddlers.. I'm gonna figure it out. You can kinda choose your own adventure here with how you want to proceed. Honestly, all the methods are equally delicious. So if you have an air-fryer and aren't against microwaves, that's your quickest path. ✌
Microwave VS Stovetop
To start these potatoes off you'll need partially cooked potatoes, to make scooping out the filling easier.
The easy method is to toss your washed potatoes into a saucepan, cover with cool water and bring your potatoes to a boil for about 10-12 minutes and then let cool.
The easiest method is to poke those washed potatoes and toss them into the microwave for 5 minutes. Let them cool before scooping.
Start Scooping
This parts the same no matter which adventure you choose. Scoop out the center of your cooled potatoes. (Don't get impatient and burn your hands like me 😆). Leave a little meat on your potato skins to give it some support. You want to try to avoid ripping the skin if possible.
Put your fillings into a bowl with those diced jalapenos (deseeded if you like it more mild), chives, seasonings and a little vegan cheese of choice. My personal favs for this are Daiya cheddar or mozzarella or VioLife Cheddar shreds. Mash it all up and fill those potato shells back up!
Air Fryer VS Oven
The easy method is to bake the stuffed potato shells on a baking sheet at 400 degrees for 20 minutes followed by broiling on high for 2-3 minutes, carefully watching to not burn the tops.
The easiest method is to toss those delicious morsels into the air fryer at 370 degrees for 10 minutes.
Both methods give you a nice brown crispy bits on the topping and creamy filling and both are equally as tasty!

Vegan Jalapeno Popper Potatoes
Ingredients
- 5 medium gold or white potatoes around 4 oz each
- 1 jalapeno diced small, deseeded for less spice
- 1 tablespoon fresh chives, chopped small may sub green onions
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon pepper
- ⅓ cup shredded vegan cheese
Instructions
Option 1 Prepare Potatoes - Microwave
- Gently poke washed potatoes 2-3 times with a knife or fork
- Microwave for 5 minutes. Let cool till able to handle by hand and continue to next step
Option 2 Prepare Potatoes - Stovetop
- Place washed potatoes into saucepan and cover with cool water
- Bring to a low boil and cook for 10-12 minutes. Potatoes should be mostly cooked.
- Set aside and let cool till able to handle by hand and continue to next step.
Prepare Filling
- Slice potatoes in half lengthwise. Carefully scrape out the insides of the potatoes, careful not to tear through the skin. Leave a small layer of potato intact for support. Set potato shells aside.
- Add removed potato, diced jalapeno, chives, garlic powder, salt, pepper and vegan cheese to bowl. Mash and mix until well combined. Some chunks are okay.
- Divide filling between potato shells.
Option 1 - Air fryer
- Place potato shells in one even layer in air fryer and cook at 370° for 10 minutes. Enjoy!
Option 2 - Oven
- Pre heat oven to 400°
- Place potato shells onto baking sheet and bake for 20 minutes.
- Watch carefully as you broil on high for 2-3 minutes to brown tops. Enjoy!
