Cherry Berry Garcia is fruity, chocolatey, and just indulgent enough to feel like a treat straight from the freezer aisle… except this version is secretly made with wholesome ingredients and packed with fiber. The cherries bring that bright, juicy pop, the chocolate adds little bites of magic, and the creamy base ties it all together.
I’ve kept this creamy on the less sweet side, so feel free to add more maple syrup, monk fruit or your favorite sweetened to reach your tastes!

Cherry Garcia Ice Cream Ingredients
This recipe list may shock you, I mean, BEANS in ice cream??? What is happening? But, you're going to have to just trust me here.
We get to make ice cream at home with wholesome plant foods and it's fabulous. So this is what we're putting in this creami:

- cannellini beans
- maple syrup
- unsweetened vanilla almond milk
- xanthan gum (optional, however, I use it to improve the texture and make our healthy ice cream less icy. So highly recommended.)
- frozen sweet cherries (or frozen berries will also work here!)
- chopped vegan chocolate (optional, but is it really?)

What if I don't have a Ninja Creami??
While this recipe is written with a Ninja Creami in mind, it is possible to make it without one! To do so, you will need to freeze the base ingredients in ice cube trays or similar.
After frozen you can add them to a High-Power blender with a ¼-1/3 cup of plant-based milk and blend until your ice cream is nice and smooth.
FAQ
You have options! As written, this is very mildly sweet. The add-ins, cherries and chocolate, will balance it out for you a bit. However, if you want it sweeter, you can add maple syrup, dates or more monk fruit to the base ice cream if desired.

Cherry Garcia Ice Cream (Vegan Ninja Creami Recipe)
Ingredients
- ½ cup cannellini beans drained and rinsed
- 2 tablespoons maple syrup
- 360 ml 1½ cups unsweetened vanilla almond milk
- ⅛ teaspoon xanthan gum
- ½ cup frozen sweet cherries
Mix-ins
- ½ cup frozen sweet cherries
- chopped vegan chocolate optional
Instructions
To Prepare:
- Add the white beans, maple syrup, frozen cherries, almond milk and xanthan gum to a blender. Blend until completely smooth and creamy.
- Pour the mixture into a Ninja Creami pint container and level the top.
- Freeze on a flat surface for at least 24 hours, until fully solid.
When Ready to Enjoy:
- Spin using the Lite Ice Cream setting.
- If crumbly, add a small splash of almond milk and spin again on the Lite Ice Cream setting once more.
- Make a hole in the center all the way to the bottom. Add the cherries and vegan chocolate. Run on the Mix-In setting & enjoy!
